AVOCADO TOAST

Some foods are so simple, so easy, that they don’t even seem worth talking about. But when it comes to avocado toast, it is. Avocado toast is technically just sliced or smashed avocado on top of a piece of toast so simple, but when you take one bite you will quickly realize that it is so much more than that.

You will never be disappointed with a plain, no-frills version of this simple dish for breakfast, lunch, dinner, midnight snack or just because you want another excuse to eat avocado.

INSTRUCTION

Toast the piece of bread until the bread is just golden brown

For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.

Slather the mashed avocado on top of the toast, followed by the smoked salmon, some  cherry tomatoes or pieces od rocket.

Serve immediately.

INGREDIENTS

  • 1 piece thick cut bread
  • 1/2 avocado
  • freshly squeeze lemon juice
  • Kosher salt and freshly cracked black pepper to taste
  • 2 thin sliced smoked salmon
  • some cherry tomatoes
  • pieces of baby rocket
